Ingredients
2 oz. Vodka
1 oz. Simple Syrup* (Recipe follows)
1/2 oz. lime juice (fresh is best, but bottled will do in a pinch)
6 large fresh mint leaves (12 small)
2 cucumber slices
To Make the Coctail
Make the simple syrup by combining 1/2 cup sugar and 1/2 cup boiling water. Stir until dissolved. Chill (preferably for several hours, but if you need it immediately, use it warm).
In a cocktail shaker, add vodka, lime juice, and simple syrup. Add the cucumber and mint and muddle. Add 1 cup of ice and shake vigorously. Strain into an ice filled glass (or two, is using small glasses). Garnish with cucumber and/or mint sprig. Enjoy!
*If you prefer a less sweet cocktail, add less simple syrup, more if you like yours sweeter. If you like the taste of cucumbers, you can add additional slices, same with the mint.
Thank you to Loon Liquors in Northfield for this recipe, which we've adapted.
